I have several sites that went offline after updating to WP4.1.1. This error only occured when the jetpack plugin is active. I am now manually disabling the plugin on the sites which are down. This seems to work.
Guessing more people will have this problem and don't know where to start when they get a Error 500 on their domains. I hope this will work for you.
